Fibrous protein produced by animal epithelial cells. It is the main component of hair, feathers, horns, nails, hooves, silk, etc., and has a protective effect on animals. It can be divided into two categories: one is α-keratin, such as the protein of hair, horns, nails, hooves, etc., which is rich in cystine in the molecule; the other is β-keratin, such as silk fibroin, which does not contain cystine and cysteine in the molecule, but has a high content of glycine, alanine and serine. It has extremely stable chemical properties and a particularly high content of disulfide bonds. Under normal conditions, it is insoluble in water, salt solution, dilute acid and dilute alkali solution, but it can be dissolved in inorganic sulfide solution. The leather industry uses inorganic sulfide to dehair leather, which utilizes this property. Wool and silk, which are mainly composed of keratin, are extremely important textile raw materials. Fiber fibroin in silk is keratin, accounting for 70-75% of silk, which is the insoluble part of silk. Its outer layer is covered with sericin (a globulin), accounting for about 22-24%, which is not filamentous and can be dissolved in hot water.
